Welcome to St Clair Wines!

Honeytree Cellar Door in Central Pokolbin is under NEW MANAGEMENT.

Our Cellar Door has been expanded with inside and outside seating, indoor and outdoor heating, air conditioning and plenty of parking. We offer wonderful wines with the Mount Eyre label, Sobels 2012-2019 labels and our own St Clair labels.

Our boutique, single source wines are grown on our own properties and made into wine locally.

The Mad Era

“The Mad Era” began during the pandemic of Covid 19, when I became very disillusioned with my life in Sydney. In March 2021 I decided that “I thought wine was my calling” so I started looking at vineyards, grape growing and wine making in Australia. My search narrowed to the Hunter Valley as it was close enough to visit family in Sydney but far enough away from the invasiveness of city life. I convinced Mum to relocate and we started looking at properties in the Hunter. We sold both our properties and settled in Wilderness Road in Lovedale where we delved into the art of viticulture.

We moved to our current vineyard location in Gillards Rd, Pokolbin in July 2025. Here I will expand on my knowledge and experience to craft new styles of wine and varieties of grape (which are not common to the Hunter), developing interesting funky wines. while having some fun. Some of the new wines on the way are – ‘Miss J Rose’, ‘SNM’, and ‘The Pedestrian’, … stay tuned for more!

Our Name

We wanted the name of our wine label to reflect our family and our heritage. Since our surname is Sinclair (Scottish) we decided to use the French spelling of St Clair.

The ancient Motto for St Clair was “Entendres toi” which translates to “you understand”. A few French people we knew said “No! No! No! Very old” and they suggested the modern version of “Bien Comprendre” translating to “Understand well”. This sat very well with us as we wanted the Cellar Door experience to be one of having an educational and social experience by tasting wonderful wines from these three Hunter properties, and learning about grapes and wine making.
